ಬೆಂಡೇಕಾಯಿ ಗೊಜ್ಜು – Bendekaayi Gojju

Having time to cook is a great luxury when you have a full time job, and travel a lot. I enjoy cooking very much. However, time is a big constraint. So, I always try to manage to make some changes to the elaborate cooking we have in our Indian foods. Some, quick and easy recipes always helps.

So, if you want to prepare authentic madhwa ಬೆಂಡೇಕಾಯಿ ಗೊಜ್ಜು  – Bendekaayi Gojju, it is quite time consuming. Especially, the frying and grinding. So, I came up with a quick recipe which actually tasted exactly like the authentic version.

Bhendekayi_Gojju

Ingredients:

  • 1 frozen  box Lady’s Finger
  • Tamarind paste one big spoon
  • Tomato Paste one big spoon
  • 3 tsp Huli or Sambar Powder
  • 6 tsp Jaggery
  • 1 tsp mustard seeds
  • 1 tsp methi seeds
  • pinch of hing
  • 1 /2 tsp haldi
  • 5-6 curry leaves
  • 2 tsp Maida

Method:

  • Thaw the Lady’s finger and microwave until soft.
  • Next, in a thick pan, add oil. When it is hot, add mustard seeds, methi seeds, hing, curry leaves, and haldi. If using fresh Lady’s finger fry them now until soft.
  • Add the cooked frozen Lady’s finger
  • In a bowl, mix the tamarind, tomato paste along with maida. Make sure there are no lumps.
  • Add this paste to the pan.
  • Also add the Huli Powder, jaggery, salt.
  • Let it boil for 7-8 minutes.
  • The gojju becomes quite thick at this point.
  • Serve with Rice and Rasam.

Sweet Potato Poori

Sweet Potato Chapathi is a huge hit in my house. I make it at least three times a month. This time had a little more dough left over, kept it in the fridge, and it became quite watery the next day i.e. today. So, I decided to make pooris out of the same dough. It was quite tasty and didn’t need any accompaniment. Quite good for lunch box if you have kids going to school.

Few ingredients, quick and easy.

Ingredients:

  • 1 large sweet potato
  • 2 cups whole wheat flour
  • salt and ground black pepper to taste
  • Oil to deep fry

Method:

  • Peel and Cook the sweet potatoes in microwave until soft
  • Mix whole wheat flour, crushed black pepper and salt
  • Mix the dough with little water
  • Make Pooris and fry.
  • Quick, easy, delicious and healthy.

ಗೋಧಿ ಪಾಯಸ – Broken Wheat Payasa

A payasa I quite often prepare. It is quite healthy when compared to other sweet dishes. Quite easy, and require few ingredients.

Ingredients:

  • Broken Wheat – 2 cups
  • Powdered Jaggery – 1 and 1/2 cups
  • Raisins, Cashews, and Almonds – handfull
  • 2 tsp dry coconut powder
  • Crushed cardamom
  • 2 tsp ghee or Oil

Method:

  • Roast the broken wheat in 1 tsp ghee or oil until a nice aroma comes.
  • Add 2 cups water and pressure cook for 2 whistles.
  • Next, in a pan add the remaining 1 tsp ghee or oil and fry the raisins and nuts. and coconut.
  • Add the cooked broken wheat, jaggery and let it boil.
  • Adjust the consistency by adding more water or milk.
  • When the Jaggery has completely melted, add cardamom and switch off the stove
