Sweet Potato Mint Paratha

I prepared this healthy, easy Paratha with very few ingredients. If you don’t have sweet potato, use a regular potato. You can read all the benefits of Flaxseed in the link below:

Ingredients:

  • 1 sweet potato or Potato
  • 1 cup Mint/Pudina finely chopped
  • 1 green chilli finely chopped
  • 1 tsp Oil
  • 2 tsps flaxseed powder
  • Salt to taste

Method:

  • Peel and Cook the sweet potatoes in microwave until soft as shown below in picture
  • Wash and finely chop Mint/Pudina and 1 green chilli
  • Mix whole wheat flour, salt, oil and 2 tsps Flaxseed Powder
  • Mix the dough. I didn’t need to add any water. If you need just add 1-2 tsp.
  • Make chapathis.
  • Serve with curd, pickle and any mixed vegetable.
  • Quick, easy, delicious and healthy.

P.S: The last couple of months have been extremely busy for me at work and home. So, I have not been able to provide any time to the blog. I am extremely sorry about that. Hopefully, in the next few weeks you will be able to see more replies and posts as well.

Vegetable Pulav

Last week, we had Sneha’s friend visit us for Dinner. She is allergic to Gluten so I had to prepare food which was free of Gluten. I went online and found out that anyone allergic to Gluten is not supposed to eat any product which contains Wheat, barley,  and rye. Sneha wanted me to make my signature dish Vegetable Bath which has been posted several times. However, I was not sure how an American would like to eat all that spices in our vegetable bath. So, I decided to make a special dish just for the girls. It was just so delicious and was over in no time. Simple, quick and easy Vegetable Pulav.

Ingredients:

  1. 2 and 1/2 cups basmati rice cooked.
  2. 1/2 cup peas
  3. 1/2 cup green beans
  4. 1 large onion finely chopped
  5. 2 small cloves of garlic finely chopped
  6. 1 inch grated ginger
  7. Spices such as Jeera, 4 cloves, 4 cardamom, 1 large bay leaf, 1 small cinnamon stick, crushed pepper
  8. 1 tsp Garam Masala
  9. salt to taste
  10. 3 tsp olive oil

Method:

  1. Wash, and cook the Basmati rice. Make sure the grains are seperate
  2. In a large pan, heat Olive oil or any oil you are using.
  3. Add all the spices. Let it fry for a few minutes
  4. Next, add finely chopped onion, garlic and grated ginger
  5. Cook the onions until they are soft.
  6. Add peas, and beans. I microwaved both of these vegetables. You can also use vegetable such as carrot, capsicum, potato and so on.
  7. When all the vegetables are soft, add the garam masala, salt
  8. Mix the rice softly.
  9. Serve with choice of Raita.

The girls enjoyed the dish very much. Both of them wanted me to post the dish on my blog so they could revisit it at a later time, and prepare when in College.

P.S: Onion and garlic are optional. However, all other spices should be used to get that fragrant rice aroma. Also a very good rice dish for lunch boxes.
