I was surprised to see that I hadn’t posted my most favorite dish ಬೂದ ಕುಂಬಳಕಾಯಿ ಮಜ್ಜಿಗೆ ಹುಳಿ – Winter Melon Majjige Huli. Hello madam.
Admirations. I have tried many of your recipes with success. I sometimes feel nostalgic and go through your recipes and remember the simple but tasty dishes prepared by my grandma. I tried majjige huli once and another curd based sauce dish once. Both times on adding the curd it coagulated and separated from the whey. It brought no change to the final taste but do you know why this happens? Thank you. Do keep up the good work.

I made this for dinner tonight and the family loved it but I served it with ragi mudde in addition to rice and some uddina happala. I usually make majjige huli with okra or tindora and add black pepper while grinding the masala

You can try with hurigadale also instead of using channadal. It has a different taste

Meera, I love to use homemade almond milk. To get 1 cup of almond milk, I grind quarter cup of almonds with liitle water, and then mix this with 1 cup of water…
Shavige payasa with homemade almond milk is really yummy!
Now, about the Majjige huli. The masala paste when mixed with almond or cashew milk gives great taste. There is sour flavor…
Do you do majjige huli with okra also?

Kum,
I have used almond milk in sweet dishes. I have always done Gojju with Okra.

Meera, cashew paste doesn’t make majjige huli sweet. You should try it some time!
Just soak 10 to 12 cashews in hot water. After 10 to 15 minutes grind it along with some water. Use this”cashew milk” .

Kum, I have used Almond milk in sweet dishes. However, not used cashew. Will try in some sweet dishes. Not in Majjige Huli. Where do you get the sour flavor in Almond paste?

I love majjige huli. I use almost the same recipe, but don’t use coriander seeds…
I use Trader joes unsweetned rice milk or cashew paste instead of yogurt, and vegan Majjige Huli is awesome!
Thanks again for the traditional recipe from Mysore area.

Doesn’t cashew paste make it sweet, Kum?
